    Wednesday Words of Wisdom- Take Time to Love In Memory of BC

    We are not promised tomorrow. We are not even promised the next second. When was the last time you told your spouse or children you love them? What about your mom and dad or grandparents?

    My dear friend from elementary through high school passed away yesterday. He was only 31 years old! He leaves behind a young wife, a little daughter, and another baby on the way! He had a stroke late last week and did not make it. He had one a few months ago, and pulled through, but this time God called him home. He had a powerful testimony and is now safe in Jesus arms. He was a wonderful singer and will be greatly missed!

    I encourage you to LOVE LOVE LOVE! Life is way too short to hold grudges and hatred in our hearts!

    Tell everyone you see or talk to today, you love them and are praying for them! AND MEAN IT!

    I love all of my readers and do pray for all of you even though I have never met most of you!

    Recipes for Today

    Chicken Casserole

    Ingredients

    • 1 large potato, thinly sliced
    • 1 tablespoon olive oil
    • 1/2 teaspoon salt
    • 1/4 teaspoon pepper

    FILLING:

    • 1-1/2 pounds chicken tenderloins, cut into 1/2-inch cubes
    • 2 teaspoons olive oil
    • 1 medium onion, chopped
    • 1 tablespoon butter
    • 2 tablespoons flour (i use rice)
    • 1-1/2 cups milk
    • 1/4 cup shredded mozzarella cheese
    • 1/4 cup grated Parmesan cheese
    • 2 tablespoons shredded cheddar cheese
    • 1 cups frozen or fresh peas
    • 1 cup frozen or fresh carrots, diced
    • 1/2 teaspoon salt
    • 1/2 teaspoon dried thyme
    • 1/4 teaspoon dried basil
    • Dash rubbed sage

    CRUMB TOPPING:

    • 1 cup soft bread crumbs (I use puffed rice cereal or rice bread)
    • 1 tablespoon butter, melted
    • 1/2 teaspoon garlic powder

    Directions

    • In a large bowl, toss potato slices with oil, salt and pepper. Arrange slices onto the bottom and sides of an 11-in. x 7-in. baking dish coated with cooking spray. Bake at 400° for 20-25 minutes or until potato is tender. Reduce heat to 350°.
    • Meanwhile, for filling, in a large skillet over medium heat, cook chicken in oil until no longer pink. Remove from skillet. In the same skillet, sauté onion in butter. Stir in flour until blended; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Reduce heat; stir in cheeses until melted. Stir in vegetables, seasonings and chicken. Spoon into potato crust.
    • Combine topping ingredients; sprinkle over chicken mixture. Bake, uncovered, for 40-45 minutes or until bubbly and topping is golden brown.

    United Grocery Outlet (UGO) is a store which specializes in closeout, liquidations, and irregulars. There are often many organic items which are unadvertised. They are able to sell items at rock-bottom prices and do not accept manufacturers coupons. If you see something and it is near expiration date or you think it should be less, just ask! They will usually mark it down for you! I can sometimes get locally grown cage free eggs here for $0.79 per dozen and sometimes even less. They have been as much as $1.69 per dozen, but not often. When I find a good deal, I stock up and either freeze or can it if it is a perishable item! Not all stores have fresh produce or meat.     Recipes for Mondays Menu

    Recipes

    • Chili Rellenos

    1 pound ground beef, browned

    3 cups (12 ounces) shredded Monterey Jack cheese

    1-1/2 cups (6 ounces) shredded cheddar cheese

    2 cans (4 ounces each) chopped green chilies, drained OR a 1/2 cup chopped green chilies

    2 eggs

    2 tablespoons milk

    1 tablespoon all-purpose flour

    Layer cheeses, meat, and chilies in a greased 13 x 9 inch square baking dish, starting and ending with cheese. In a bowl, beat the eggs. Add the milk and flour; pour over cheese. Bake at 375° for 30 minutes or until set. Cut into squares. Serve warm.

     

    • Homemade Granola (I make a large batch and put the remainder in a glass container to eat another day or as a snack)

    Recipe 1 (Maple Walnut Granola)

    4 cups rolled oats

    4 cups puffed rice cereal

    1 cup dried fruit

    2 cups chopped walnuts (or nut of choice)

    2 teaspoons vanilla extract

    1/2 cup olive oil

    1 1/2 cup maple syrup or honey

    In a large mixing bowl, combine the oats, cereal, dried fruit, nuts, and vanilla. Add the oil and stir evenly. Pour in maple syrup and mix well until evenly moistened. Mixture should be crumbly and sticky. Spread mixture in a cookie tray and bake at 400 degrees for 10 minutes. Stir and bake until desired crispiness. Serve immediately or cool and store in an airtight container.

    Recipe 2 (Quick and Yummy Granola)

    1 stick butter

    1/2 cup honey

    4 cups rolled oats

    4 cups puffed rice cereal

    Nuts, dried fruit, coconut, chocolate chips, cinnamon, vanilla, etc. as desired

    In large Dutch oven, over low heat, melt together butter and honey. Remove from heat. Stir in oats, cereal, and other additions. Stir well to coat. Bake 10 minutes at 400 degrees. Stir and bake 5 more minutes or until desired crispiness is achieved. Serve immediately or cool and store in an airtight container.

     

    • Rice Bread (gluten and yeast free!)

    2 cups rice flour

    1 tsp. xanthan gum or an extra egg

    1/2 tsp. salt

    2 tsp. baking powder

    2 eggs

    3 tablespoons oil

    3 tablespoons honey

    1 cup milk (can also use water or juice for a sweet bread)

    Combine dry ingredients. Beat eggs in separate bowl and add eggs and remaining ingredients to dry ingredients. Mix until smooth. Pour into a well greased 1 pound loaf pan. Bake at 350 degrees for 45 minutes.

    • Spanish Rice

    2 tbs. butter

    1 cup chopped onions

    1 garlic clove minced

    2 cups chopped tomatoes with juice

    2 cups uncooked rice

    1 tsp. salt

    1 tablespoon chili powder

    1/4 tsp. oregano

    1 cup water

    Sauté onions and garlic in butter until translucent. Add remaining ingredients. Bring to a boil. Reduce heat. Cover and let simmer for 25-30 minutes or until all water is absorbed and rice is tender.

    Monday Menu from the Farm

    I have not been posting menus because our weeks have been so unpredictable since the baby has been born. We have also still been having different people bring us meals which were unexpected blessings! I think all the meals have more than likely stopped; therefore, I am going to try to have a menu this week which I actually get to stick to somewhat! :) The recipes will be in a separate post.

    Monday

    Breakfast- Granola and Goat Milk (I had a cheese omelet with chopped onions and scallions from the garden).

    Lunch- Grilled cheese and Turkey sandwiches on Rice Flour Bread, carrot and celery sticks

    Snack- Apple with peanut butter or almonds

    Supper- Chili Rellenos, Spanish Rice, beans, Salad

    Tuesday

    Breakfast- Oatmeal with apple slices

    Lunch- bean and cheese burritos, left over rice, small salad

    Snack- Yogurt and Granola

    Supper- Chicken casserole, green beans, baked potatoes

    Wednesday

    Breakfast- Eggs, grits, hash browns (using leftover potatoes), peaches

    Lunch- Peanut Butter and Jelly Tacos, carrot and celery sticks, glass of goat milk
